Sam's Chef de Cuisine, Paul Rose, began cooking at a young age and quickly found both passion and aptitude for the culinary world. Paul’s career has spanned notable kitchens including Chatham Bars Inn, Beano’s Cabin, Viceroy Snowmass—where he rose to sous chef—and Aspen Meadows, along with leadership roles in nonprofit culinary education and recovery-focused workforce training. Along the way, he discovered a deep love for teaching and mentoring young cooks, a passion that continues to shape his approach in the kitchen at Sam's.
